塩麹を暫く前に作成して、知り合いにも数瓶配り、家でちびちび使っていたのですが、今朝、もしかして、、という発見をしました。 我が家は子供が６時過ぎに朝食を食べ、あとの人は７時。 ですので、今朝は子供が朝食を食べてから　キャベツ炒めをしました。 ＆その中に　数日前作った　キャベツの塩麹漬けの余り汁のしおこうじをふりかけ、蓋をして７時まで放置。（余り汁がもったいなくて捨てられなかったというケチ） 多分、発酵したのです。 ５０度～６０度で甘酒になるっていう、あの作用です。 キャベツ　ほんのり甘い塩味になっていました。 麹は多分生きています。 漬ける、漬け込んで焼く、熱い鍋に入れてスープにする、などとい ...
